How it Works
Equipment Needed
Chemex, Chemex paper filter (thicker than standard), kettle (gooseneck preferred), scale, and timer.
Grind Size
Medium-coarse—slightly coarser than a standard pour-over, similar to sea salt.
Filter Prep
Place the thick Chemex filter into the brewer, ensuring the triple-folded side faces the spout. Rinse with hot water to remove papery taste and preheat the glass. Discard rinse water.
Coffee & Water Ratio
Commonly 1:15 to 1:17 (e.g., 30g coffee to 450–510ml water).
Bloom
Add coffee grounds, then pour about twice their weight in hot water (195–205°F / 90–96°C) to let the coffee “bloom” for 30–45 seconds.
Pouring
Slowly pour water in circular motions, keeping the grounds evenly saturated. Continue in stages until you reach the total water amount.
Drip & Serve
Allow water to fully drain through the grounds into the Chemex, then pour and enjoy.
